Carrot Cake

Cake Ingredients

  • 220g flour
  • 2 large carrots, finely grated
  • 100g cane sugar
  • 100ml plant oil
  • 2 tsp vanilla sugar
  • 3 tbsp lemon juice
  • ½ lemon zest, grated
  • 2 tsp baking powder
  • a pinch of cinnamon
  • Egg alternative

Glaze ingredients

  • 75g icing sugar
  • 2 drops lemon flavor
  • 1 tbsp amaretto

Method

  1. Prepare the egg alternative, mix in sugar, oil, cinnamon, vanilla sugar, lemon juice, lemon zest and the grated carrots. Add flour and baking powder and mix thoroughly
  2. Grease the cake pan and fill with mixture. Bake at 160°C for about 30 minutes.
  3. While the cake is in the oven, whisk everything into a thick glaze using 1 to 2 tbsp of hot water.
  4. Use a pastry brush to apply the glaze to the warm cake.
  5. Enjoy!
